This creamy taco soup is a one-pot meal full of Tex-Mex flavor, hearty beans, ground meat, and a rich, comforting broth. Ready in under 40 minutes and perfect for busy nights or meal prep.

Ingredients

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 23 tbsp taco seasoning
  • 1 can diced tomatoes with green chiles
  • 1 can black beans, rinsed and drained
  • 1 can pinto beans, rinsed and drained
  • 1 cup corn
  • 2 cups chicken or vegetable broth
  • 4 oz cream cheese
  • ½ cup heavy cream or half-and-half
  • Salt and pepper to taste

Instructions

  1. Brown ground meat with onion in a large pot. Add garlic and taco seasoning.
  2. Stir in tomatoes, beans, corn, and broth. Simmer 10–15 minutes.
  3. Add cream cheese and cream. Stir until smooth. Simmer 5–10 more minutes.
  4. Serve hot with your favorite toppings.

Notes

Store up to 4 days in the fridge. Freeze before adding dairy for best results. Customize with more spice or extra veggies.
