3 large eggs
½ cup low-fat cottage cheese
2 whole wheat or low-carb tortillas
½ cup diced bell peppers
¼ cup chopped onion
½ cup fresh spinach or arugula
¼ avocado, sliced (optional)
Salt and pepper to taste
½ tsp garlic powder (optional)
2 tsp olive oil or cooking spray
Dice peppers, onion, and slice avocado.
In a skillet, heat olive oil and sauté peppers and onions until soft. Add spinach to wilt.
