These Baked Cottage Cheese Eggs are high in protein, low in carbs, and perfect for breakfast meal prep. Creamy, fluffy, and endlessly customizable!

Ingredients

  • ½ cup cottage cheese (2% or full-fat)

  • 2 tbsp milk or cream (optional)

  • Salt and pepper to taste

  • 1 tbsp chopped fresh herbs (chives, parsley, or dill)

  • Optional: diced veggies, cooked turkey bacon, shredded cheese

Instructions

  • Preheat oven to 375°F. Grease muffin tin or baking dish.

  • Whisk eggs, cottage cheese, milk, salt, and pepper until combined.

  • Stir in herbs and optional add-ins.

  • Pour into prepared dish or muffin cups, ¾ full.

  • Bake 18–22 minutes or until set in the center.

  • Cool slightly and serve with desired toppings.
