Hobo Casserole is a hearty, budget-friendly ground beef recipe layered with thin potatoes, onions, creamy mushroom sauce, and melted cheese. A true comfort food classic.

Ingredients

  • 1 lb ground beef
  • 2 medium russet potatoes, thinly sliced
  • 1 medium onion, sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 1½ cups shredded cheddar cheese (divided)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika (optional)

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. Brown ground beef with seasoning; drain fat.
  3. In a bowl, mix soup, milk, and ½ cup cheese.
  4. Layer half the potatoes, onions, beef, and sauce. Repeat.
  5. Cover with foil and bake 45 minutes.
  6. Uncover, top with remaining cheese, and bake 15–20 more minutes.
  7. Let rest 10 minutes before serving.

  • Add frozen or fresh veggies for variety.
  • Use ground turkey or sausage to switch up the flavor.
