2 cups cooked, cooled brown rice
1½ cups mixed vegetables (fresh or frozen)
1–2 eggs, lightly beaten
2 cloves garlic, minced
1 tsp fresh ginger, grated
1½ tbsp low-sodium soy sauce
1 tsp olive oil or spray
½ tsp sesame oil (optional)
2 tbsp green onions, chopped
Salt and pepper to taste
Use day-old rice for best texture. Swap in cauliflower rice to lower carbs. Great for meal prep.
