This cowboy casserole is a hearty, cheesy, and comforting dish made with ground beef, corn, creamy sauce, and crispy tater tots—perfect for family dinners or meal prep.

Ingredients

1 lb ground beef
1 onion, diced
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
½ cup sour cream
1½ cups corn (frozen or canned)
2 cups shredded cheddar cheese, divided
1 tsp paprika
Salt and pepper, to taste
1 (32 oz) bag frozen tater tots
Chopped green onions or parsley, for garnish

Instructions

  1. Preheat oven to 375°F. Grease a 9×13 baking dish.
  2. Brown beef and onion in skillet (6–8 mins). Add garlic and cook 1 more min.
  3. Stir in soup, sour cream, paprika, salt, and pepper.
  4. Fold in corn and 1 cup cheese.
  5. Spread mixture in dish. Top with tater tots and remaining cheese.
  6. Bake uncovered 35–40 mins until golden and bubbly.
  7. Rest 5 mins. Garnish and serve.

Notes

Swap ground beef with turkey. Add beans or jalapeños for variation. Assemble ahead for easy weeknight baking.
