Crispy roasted potatoes topped with taco-seasoned ground beef, melted cheese, and all your favorite toppings — a quick, satisfying dinner made in just 6 steps.

Ingredients

  • 4 medium potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 2 tbsp tomato paste or 1/4 cup salsa
  • 1/4 cup water
  • 1 cups shredded cheddar or Mexican blend cheese
  • Optional toppings: sour cream, green onions, tomatoes, avocado, jalapeños

Instructions

  1. Preheat oven to 425°F. Toss diced potatoes with oil and seasonings. Roast 25–30 mins until crispy.
  2. Brown ground beef in a skillet. Drain, then stir in taco seasoning, tomato paste, and water. Simmer 3–4 mins.
  3. Spoon taco meat over roasted potatoes.
  4. Top with shredded cheese.
  5. Bake 5–7 minutes until cheese is melted and bubbly.
  6. Garnish with desired toppings and serve hot.
