4–5 medium russet or Yukon gold potatoes, diced
2 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
½ tsp salt
1 tbsp oil (for beef)
1 small onion, diced
1 lb ground beef
2 tbsp taco seasoning
¼ cup water
1½ to 2 cups shredded cheddar or Mexican blend cheese
Sour cream, salsa, green onions, jalapeños, cilantro (for topping)
