A cheesy, comforting one-pan meal made with roasted potatoes, smoked sausage, and ranch seasoning—perfect for easy dinners, potlucks, or meal prep.

  • lbs baby potatoes, halved or quartered

  • 12 oz smoked sausage, sliced

  • 1½ cups shredded cheddar cheese

  • 2 tbsp olive oil

  • 1 tbsp ranch seasoning

  • Salt & pepper to taste

  • Optional: green onions or parsley for garnish

Instructions

  1. Preheat oven to 400°F. Line a sheet pan or grease a casserole dish.

  2. Toss potatoes with oil, ranch seasoning, salt, and pepper. Roast for 25–30 mins.

  3. Brown sliced sausage in skillet until crispy.

  4. In casserole dish, combine roasted potatoes, sausage, and 1 cup cheese. Mix gently.

  5. Sprinkle remaining ½ cup cheese on top.

  6. Bake for 10 more minutes until cheese is melted and bubbly.

  7. Garnish and serve hot.

Notes


Swap potatoes for cauliflower to make keto-friendly. Use spicy sausage for extra heat. Reheats well and can be frozen.
