A cheesy, comforting one-pan meal made with roasted potatoes, smoked sausage, and ranch seasoning—perfect for easy dinners, potlucks, or meal prep.
1½ lbs baby potatoes, halved or quartered
12 oz smoked sausage, sliced
1½ cups shredded cheddar cheese
2 tbsp olive oil
1 tbsp ranch seasoning
Salt & pepper to taste
Optional: green onions or parsley for garnish
Preheat oven to 400°F. Line a sheet pan or grease a casserole dish.
Toss potatoes with oil, ranch seasoning, salt, and pepper. Roast for 25–30 mins.
Brown sliced sausage in skillet until crispy.
In casserole dish, combine roasted potatoes, sausage, and 1 cup cheese. Mix gently.
Sprinkle remaining ½ cup cheese on top.
Bake for 10 more minutes until cheese is melted and bubbly.
Garnish and serve hot.
Swap potatoes for cauliflower to make keto-friendly. Use spicy sausage for extra heat. Reheats well and can be frozen.
