5 cups diced potatoes (Yukon or russet)
2 tbsp olive oil
1 oz ranch seasoning packet
Salt & pepper to taste
14 oz smoked sausage, sliced
½ cup sour cream or ranch dressing
1½ cups shredded cheddar cheese
Optional toppings: green onions, bacon, parsley
Preheat oven to 400°F and grease a 9×13″ dish.
Toss potatoes with oil, ranch seasoning, salt, and pepper.
Bake 25–30 min, stirring halfway.
Add sausage, sour cream, and 1 cup cheese. Mix well.
