Cheesy Meatloaf Casserole That’s Comfort Food Done Right

A hearty, cheesy meatloaf casserole with a savory beef layer, creamy mashed potatoes, and golden melted cheddar. A quick and easy dinner perfect for the whole family.

Ingredients

lbs lean ground beef
1 small onion, diced
2 garlic cloves, minced
1 egg
½ cup breadcrumbs
¼ cup ketchup
1 tbsp Worcestershire sauce
Salt and pepper to taste
½ tsp dried thyme or parsley
2 lbs potatoes, peeled and cubed
4 tbsp butter
½ cup milk
1½ cups shredded cheddar cheese
1 tbsp olive oil
Optional: fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F. Grease 9×13-inch casserole dish.
  2. Boil potatoes until tender. Drain and mash with butter, milk, salt, and pepper.
  3. Sauté onion in olive oil 5 minutes. Add garlic, cook 1 minute more.
  4. In bowl, mix ground beef, onion, garlic, egg, breadcrumbs, ketchup, Worcestershire, herbs, salt, and pepper.
  5. Press meat into casserole dish. Spread mashed potatoes on top.
  6. Sprinkle with cheddar cheese.
  7. Bake 30–35 minutes until cheese is bubbly and meat is cooked through.
  8. Let rest 5–10 minutes before serving. Garnish with parsley.

Notes

Use leftover mashed potatoes or instant mix. Substitute ground turkey or add sautéed vegetables for variation. Freezes well.
