This cheesy ground beef and rice casserole is a classic, comforting one-dish meal made with seasoned beef, tender rice, creamy sauce, and melty cheddar cheese—perfect for family dinners or meal prep.

1 lb ground beef
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced (optional)
1 can (14.5 oz) diced tomatoes, with juice
1 can (10.5 oz) cream of mushroom soup
½ cup milk or broth
1 tbsp Worcestershire sauce
2½ cups cooked white rice
2 cups shredded cheddar cheese, divided
1 tsp salt
½ tsp black pepper
½ tsp paprika
2 tbsp olive oil (if needed)
Parsley or green onions for garnish

Instructions

  1. Preheat oven to 375°F. Grease a 9×13 baking dish.
  2. Brown beef with onion, garlic, salt, pepper, and paprika. Drain fat.
  3. Stir in bell pepper and diced tomatoes. Cook 3–4 mins.
  4. In a bowl, mix soup, milk, Worcestershire, and 1½ cups cheese.
  5. Add beef mixture and cooked rice. Mix well.
  6. Transfer to baking dish. Top with remaining ½ cup cheese.
  7. Bake uncovered 25–30 mins until bubbly.
  8. Let rest 5 mins. Garnish and serve.

Notes

Use brown rice or ground turkey for a lighter version. Add extra veggies like peas or spinach to boost nutrition.
