1½ lbs gold or red potatoes, cubed
12 oz smoked sausage, sliced
½ onion, diced (optional)
2 tbsp olive oil
1 packet ranch seasoning mix (or 2 tbsp homemade)
½ cup sour cream or 4 oz cream cheese
1½ cups shredded cheddar cheese
Optional garnish: chopped parsley or green onions
Instructions
Preheat oven to 400°F. Grease a 9×13 baking dish.
In a large bowl, toss potatoes, sausage, onion, oil, and ranch mix.
Transfer to dish, cover with foil, and bake for 25 minutes.
Uncover and bake another 20 minutes, stirring halfway.
Stir in sour cream. Top with cheese and return to oven for 5–10 minutes until melted and bubbly.
