2 tbsp olive oil or butter
2 yellow onions, thinly sliced
3 garlic cloves, minced
1 tsp fresh thyme leaves
1 bay leaf
1½ lbs mixed wild mushrooms, sliced
6 cups vegetable broth
4 cups kale, chopped
Salt and pepper to taste
1–2 tsp balsamic vinegar or lemon juice
