This chicken thigh osso bucco is a comforting, slow-braised dish featuring bone-in chicken simmered in a tomato, wine, and vegetable sauce. A modern twist on an Italian classic that’s hearty, flavorful, and perfect for cozy meals.

Ingredients

6 bone-in, skin-on chicken thighs
2 tbsp olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
¾ cup dry white wine
1½ cups crushed tomatoes
1 cup chicken broth
1 bay leaf
1 tsp fresh thyme
Salt and pepper, to taste
Zest of 1 lemon or gremolata, for garnish

Instructions

  1. Season chicken with salt and pepper. Sear in oil until browned. Remove.
  2. Sauté onion, carrots, celery 5–7 minutes. Add garlic, cook 1 minute.
  3. Deglaze with wine. Simmer 2–3 minutes.
  4. Add tomatoes, broth, bay leaf, and thyme. Return chicken.
  5. Cover and simmer on low 35–40 minutes or bake at 350°F.
  6. Discard bay leaf. Adjust seasoning. Garnish with lemon zest or gremolata.
  7. Serve with polenta, mashed potatoes, or crusty bread.

Notes

Use boneless thighs for faster cooking. Skip wine for broth + lemon juice. Add mushrooms or olives for variety.
