6 bone-in, skin-on chicken thighs
2 tbsp olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
¾ cup dry white wine
1½ cups crushed tomatoes
1 cup chicken broth
1 bay leaf
1 tsp fresh thyme
Salt and pepper, to taste
Zest of 1 lemon or gremolata, for garnish
