A hearty and cheesy casserole with seasoned ground beef, caramelized onions, tender rice, and French onion soup flavor. Perfect for cozy weeknight meals.

1 lb ground beef
2 yellow onions, thinly sliced
2 tbsp butter or oil
2 garlic cloves, minced
3 cups cooked white or jasmine rice
1 can (10.5 oz) condensed French onion soup
1/2 cup sour cream
1/2 cup beef broth
1 tbsp Worcestershire sauce
1 1/2 cups shredded cheese, divided (Gruyère, mozzarella, or cheddar)
Salt and black pepper to taste
Optional: 1 cup French fried onions for topping

Instructions

  1. Preheat oven to 375°F. Grease a 9×13 baking dish.
  2. Caramelize onions in butter for 15–20 minutes until golden.
  3. Brown ground beef in same skillet. Add garlic and Worcestershire.
  4. Combine cooked rice, beef, onions, soup, sour cream, broth, and 1 cup cheese.
  5. Spread into dish. Top with remaining cheese. Cover with foil.
  6. Bake 20 minutes. Uncover and bake 10–15 minutes more.
  7. Add French fried onions and bake final 5 minutes, if using.
  8. Let sit before serving.

Notes

Use lean ground meat or turkey for a lighter version. Add mushrooms or spinach to increase veggies.
