Basil Balsamic Chicken Made in One Pan

Juicy chicken breasts or thighs simmered in a rich balsamic glaze with garlic, herbs, and blistered tomatoes. A one-pan dinner that’s quick, flavorful, and perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1½ cups cherry tomatoes
  • 34 garlic cloves, minced
  • ⅓ cup balsamic vinegar
  • 2 tbsp honey or brown sugar
  • 1 tsp dried Italian seasoning
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Optional: fresh basil or parsley for garnish

Instructions

  1. Season chicken with salt, pepper, and garlic powder.
  2. Sear chicken in hot oil until golden, 4–5 minutes per side. Remove and set aside.
  3. Sauté garlic and cherry tomatoes in the same skillet.
  4. Add balsamic vinegar, honey, and seasoning. Simmer briefly.
  5. Return chicken to pan and cook 8–10 minutes until done.
  6. Garnish with herbs and serve with sides of your choice.

Notes

Adjust sweetness or acidity to taste. Add spinach or green beans for extra vegetables. Use thighs for a juicier result.
