2 large ripe avocados (about 1 cup mashed)
2 large eggs
1 cup self-rising flour
Instructions
Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment.
Mash avocados until smooth in a large bowl.
Add eggs and whisk until well combined.
Fold in self-rising flour gently until just combined.
Pour into loaf pan and smooth the top.
Bake for 35–40 minutes or until golden and a toothpick comes out clean.
Cool in pan 10–15 minutes, then transfer to a wire rack.
Notes
For gluten-free, use a GF self-rising blend or add baking powder to almond flour.
Add sweeteners or savory seasonings for variation.
